I Can’t Believe it’s Mashed Cauliflower!

My husband loathes cauliflower.  He won’t touch the stuff.  But when I asked him to try out my mashed cauliflower, I had trouble getting the bowl back from him so I could take a picture of it!  This is a great way to get your veggies in, cut out extra carbs, and at only 178 calories per serving – it’s guilt-free too!

Mashed Cauliflower
Makes 2 Servings
178 Calories per serving (roughly 1 cup)
13g Fat, 10g Carbs, 6.3g Protein, 3.5g Fiber

Ingredients
3 1/2 cups Steamed Cauliflower
1/4 cup skim milk
2 TBSP unsalted butter
1 TBSP Dehydrated Onions (I used Tastefully Simple’s Onion Onion)
1/8 cup Italian Blended Cheese, shredded

Directions
1. Cut up 1 small head of cauliflower, and steam for 10-15 minutes or until cauliflower is soft.

2. Transfer cauliflower into your blender, add butter, milk, and dehydrated onions.

3. Blend until desired consistency (I like mine smooth).

4. Pour into bowl, stir in shredded cheese until cheese is melted through. Salt and pepper to taste.

I am no fitness expert. I am simply someone who has found joy in fitness and nutrition. I am a certified group fitness instructor. I’ve been teaching at the local health club for about 3 years now. While Zumba was my first love, I have since added Total Conditioning, Bodyworks plus Abs, and Core to my repertoire of classes. I am always looking for new ways to further my education and knowledge to better serve the members that take my group fitness classes. Lately, I have started tinkering with recipes, buying healthy cookbooks, and finding easy, tasty, and healthy foods to make. Like I mentioned earlier, I am by no means an expert, but the things I share with you have helped me tremendously with my fitness journey. It is my hope that with these easy tips and recipes, that you too can make these tiny steps and see big positive changes in your life.

    I like regular old cauliflower with a cheese sauce but that sounds even better!

    This sounds great but I’m not a huge fan of cheese ( I know I’m like the only person in the world who can say that). Would it still be good without the cheese do you think?

      I think it would be perfectly fine without cheese. Throw in some green onions if you like and any other mashed potato topper. My husband likes cheese, otherwise I wouldn’t have put any in myself.
