Blueberry Banana Baked Oatmeal – Gluten Free
Super Simple and Super good!
2 cups Gluten Free Old-Fashioned Oats
1/3 cup Brown Sugar (I used Splenda, Brown Sugar Blend)
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon low sodium salt
1 cup fresh blueberries
1/4 cup mini semi-sweet chocolate baking chips
1/4 cup pecans (or walnuts), chopped (optional)
1 medium banana, sliced
2 cups milk
1/4 cup liquid egg substitute (or 1 large egg)
1 Tablespoon Vanilla Extract
3 Tablespoons Butter (or Margarine), melted
1. Preheat the oven to 375 degrees F. Spray a 10 1/2″ x 7″ glass baking dish with non-stick cooking spray and set aside.
2. In a mixing bowl, combine oats, brown sugar, baking powder, cinnamon, salt, 1/2 cup blueberries, 1/8 cup chocolate chips, and 1/8 cup of nuts. Gently stir to combine and spread evenly into the prepared baking dish. Top with remaining blueberries, chocolate chips, and nuts. Place sliced bananas on top of the oatmeal mixture.
3. In another bowl, whisk together milk, egg subsitute, vanilla extract, and melted butter. Gently pour liquid over the oatmeal. Gently shake the baking dish to help the milk cover all of the oats. If you want – sprinkle the top with a little bit of brown sugar.
4. Place in the oven for about 30 minutes, or until the oatmeal is a light golden brown and the milk mixture has set. Remove from the oven and let stand for 5 minutes. Cut and serve.
